Position Title: Executive Sous Chef

Position Overview: The Executive Sous Chef is responsible to assist the Executive Chef for overall kitchen operation as a successful independent profit center, ensuring maximum resident satisfaction, through planning, organizing, directing, and controlling the Kitchen operation and administration.

Exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Also Assists in supervising all kitchen areas to ensure a consistent, high-quality product is produced.

Essential Job Functions:

  • Interacts with residents to obtain feedback on product quality and service levels.
  • Responds to and handles resident’s problems and complaints.
  • Ensures that residents are always receiving an exceptional dining experience representing true value for money.
  • Makes recommendations to the Executive Chef regarding succession planning.
  • Provides support to the Executive Chef with meeting financial budgets and goals.
  • Ensures that all recipes and product yields are accurately costed and reviewed regularly.
  • Ensures that all food items are prepared as per standard recipe cards while maintaining portion control and minimizing waste.
  • Ensures that food stock levels within various areas of kitchen are of sufficient quantity and quality in relevance to operation needs.
  • Ensures that a consistent first-class product of the highest quality is achieved and maintained in all culinary areas, while adhering to operational deadlines.
  • Ensures that cooks are always in clean, tidy uniforms and are always presentable to be in resident view.
  • Ensures that all food preparation equipment is being used safety and correctly and that it is cleaned and maintained.
  • Ensures that all culinary operations manuals are prepared and updated.
  • Ensures that the Department’s overall operational budgets are strictly adhered to.
  • Ensures that the culinary department adheres to all company policies and procedures.
  • Ensures that meetings are well-planned and results orientated.
  • Assists the Executive Chef in creating the menu planning and ensures correct food preparation for each outlets including banquets.
  • Works in close conjunction with the Food and Beverage Manager and respective & teams, to create F&B activities for the restaurant.
  • Ensures that all relevant banquet set-ups are prepared 15 minutes ahead of resident’s arrival and in adherence with F&B standards.
  • Maintains awareness of new items, which are introduced onto the market and keep up with the lasted product trends.
  • Initiates relevant maintenance reports and work orders supported by the respective follow up of those items actioned.
  • Manages associates fairly and take a personal interest in knowing all culinary associates.
  • Spends time in the restaurant to ensure that the operation is managed well by the outlet team.
  • Ensures that all food products received into the property are of the required standard and high quality and that they are stored and rotated correctly.
  • Supervises all utility associates and their activities within the culinary department.
  • Ensures that weekly work schedules and annual leave planners are administered and filed correctly.
  • Delegates responsibilities to subordinates as required.
  • Recruits and select a suitable culinary team who are able to work within a decentralized management philosophy.
  • Identifies strengths and weaknesses and provide timely feedback to the individual.

You Have:

  • Culinary diploma or certification from a accredited institution required.
  • Previous experience as a Cook in a senior living community preferred.
  • At least 10 years’ culinary experience with 5 years in a management position.
