MISSIONS

Position Profile:
Through effective hands-on management, leadership and direction ensures maximum creativity at the highest quality culinary standards within the hotel.

  • Ensures guests experience the highest quality 5 star culinary standards through taste, presentation, menu selection

  • Interacts with guests, particularly at high profile events and through personal presence, inspires a high level of creativity amongst the culinary team, modeling a true personal commitment to service excellence and an emotional sense of gracious hospitality

  • Participates in recruitment, manages team members and effectively coaches, trains, motivates, communicates, recognizes, schedules, provides performance feedback, maintains high levels of team spirit and conducts performance correction if required

  • Leads the day-to-day culinary operation through hands-on personal involvement, oversees culinary department budgets

  • Reviews monthly F&B P&L and recommends/institutes measures for revenue enhancement and cost control for any material deviation

  • Ensures brand integrity for food quality and hygiene, including strict implementation of Food Safe and Hygiene programs, cleanliness of all kitchen and prep areas, personal hygiene standards for all food handlers

  • Maintains excellent knowledge of local vendors, food trends and industry practices

  • Evaluates standards of cleanliness, maintenance and presentation plus safety of all culinary areas of the hotel through inspections and ensures areas of deficiency are resolved to achieve service expectations

  • Develops and implements creative food strategies , ensuring maximum creativity, presentation, quality and taste in all menus, service styles and all other F&B disciplines applicable to the hotel

  • Directs communication efforts within the department, ensuring effective communication amongst team members, suppliers, attendance at meetings and ensures that reports are completed accurately and on-time

  • Establishes an annual promotion and menu plan with the our Culinary Consultant, F&B management team, event sales manager
  • Maintains proper and adequate controls over culinary labour costs, requisitions, purchase orders, receipt of goods and inventory

  • Passion for food and strives to exceed expectations for culinary excellence with demonstrated understanding of international fine dining, wine and service standards
  • People focused and ability to stage culinary talents
  • Strong organization skills, ability to prioritize workload, multi-task in a calm manner, with exceptional attention to detail
  • Demonstrates knowledge of budgeting, forecasting, food costing and inventory management/controls techniques
  • Excellent communication skills
  • Proven innovator, responds promptly and reasonably when making decisions, ultimately ensuring successful problem resolution, strong willingness to "think outside the box" to deliver highly creative culinary standards
  • Demonstrates safe work practices and looks for ways to minimize culinary injuries
  • Inspires employe commitment, loyalty and motivation
  • Fosters a climate of continuous learning, growth and improvement, with a strong commitment to the career development of others
  • Operates and maintains all departmental equipment, fully competent with current Windows based programs (Word, Excel, MS Outlook)
  • Minimum 10 years culinary experience
  • Minimum 5 years previous work experience in a similar capacity
  • Culinary degree or diploma from reputable, recognized culinary institute
